Nova Maple Syrup: A Family-Produced Delight from Northwest Pennsylvania

Nova Maple Syrup is a family-produced, all-natural maple syrup that is sustainably harvested from the hardwood forests of Northwest Pennsylvania. The syrup is crafted with pride, ensuring an exceptional flavor that you're sure to enjoy.

This 100% pure maple syrup is Grade A, offering the best flavor and color available. Harvested and made in the USA, it is derived entirely from real maple sap, with no artificial additives, preservatives, or dyes. The syrup is also gluten and dairy-free.

The International Grading System, which took effect in 2015, is used to classify Nova Maple Syrup. Customers can choose from Grade A Golden Delicate Taste, Amber Rich, Dark Robust, and Very Dark Strong, each offering a unique flavor profile. Darker syrups have a stronger maple taste, but both light and dark varieties are equally sweet, containing 67% natural sugar and 33% water.

Nova Maple Syrup's products extend beyond the traditional syrup. The company also offers maple sugar, a versatile sweetener, as well as maple cream, a rich spread with a texture akin to natural peanut butter. Seasonal maple candy, a melt-in-your-mouth delight, is also available.

The maple syrup production process begins in January or February, when the company taps both hard (sugar) and soft (red) maple trees across four properties. Tubing is used to connect the trees to a vacuum pump, which helps draw the sap. The clear, water-like sap, which contains 1-3% sugar, is then run through a reverse osmosis system to increase the sugar content before being boiled in the evaporator.

The boiling process utilizes a steam recovery system to conserve fuel oil, ensuring an efficient and sustainable operation. Once the syrup reaches the desired 67% sugar content, it is filtered, bottled at high temperatures to eliminate bacteria, and either sent directly to customers or stored in food-grade barrels for future use.

Nova Maple Syrup has its roots in a hobby that began in 2013 on a 1.5-acre plot, where owners Jake and Hailee Leveto tapped 50 trees and produced 17 gallons of syrup. The business was established in 2015 with the purchase of a 100-acre property, and the company has since expanded to 22,500 taps across 275 acres.

Today, the family-owned and operated business, named after the Levetos' dog, Nova, a golden retriever/German shepherd mix, is committed to sustainability, using solar-powered equipment and energy-saving systems.
